Sara will welcome you to her farmhouse surrounded by olive trees, pastures, farmland and dry stone walls. This is where Sara grew up and learned everything she knows about cows, cheese and country traditions. No matter what season you visit Sara's farm, you will always be impressed by the richness of nature and its colors.
At the beginning of the mozzarella tour, Sara will take you on a tour of the farm and explain how she takes care of her cows and bulls, a hundred head of cattle that are the heart of her farm. In addition to being as attached to them as if they were her own children, their well-being is in fact essential to the quality of the milk and thus the cheeses Sara produces.
Arriving at the artisanal dairy tour, Sara will explain the various steps she takes every day to transform the freshly milked milk into delicious mozzarella, ricotta, caciocavalli and many other types of cheese. You will be able to see with your own eyes with what skillful movements Sara works the pasta filata, which you can then shape with your own hands to make mozzarella to be enjoyed on the spot, still warm.
The mozzarella tour will end with a hearty tasting of fresh and aged cheeses made by Sara at the masseria, all made by hand and with the use of whey graft according to the most authentic tradition. This provides an inimitable taste to her dairy products and makes them almost lactose-free.
During the cheese and mozzarella tasting, you will have time to chat with Sara to ask her as many questions as you'd like and learn more about her history as an artisan dairy farmer and cheesemaker.
