Program of the day:
9:00 a.m. - Welcome Breakfast
Start your experience with a warm and wholesome breakfast provided by Veghu & Plant Essence. A perfect time to recharge your energy and get to know the other participants.
9:30 a.m. - Theoretical Part
The theory session includes:
- Presentation of course content.
- Introduction to trainers, experts in the preparation of traditional and innovative dishes.
- Theoretical and propaedeutic hints on pasta and vegetable cooking.
10:30 a.m. - Workshop Part: Traditional Raviolo.
Demonstration:
- Preparation and hand-rolling of white semolina pasta sheet.
- Preparation of vegetable almond ricotta, with detailed explanation of the process.
- Making the filling from almond ricotta, spinach and lemon.
- Hand composition and closing of ravioli with pasta cutter wheel.
Mani in Pasta:
Participants will put their hands to pasta, making classic ravioli independently. They will follow the techniques learned during the demonstration: rolling out the pasta sheet, composing and closing ravioli with the pasta cutter wheel.
13:30 - Shared Lunch.
End the day with a convivial lunch, where you can enjoy ravioli prepared with your own hands, sharing the experience with other participants.
2:00 p.m. - Workshop Part: Raviolo with Green Puff Pastry
Demonstration:
- Preparing and rolling out the green spinach puff pastry using the planetary and puff pastry machine.
- Step-by-step preparation of the tofu and lemon-scented spinach filling.
- Composition and closing of ravioli using 12-piece mold and pastry cutter wheel.
Raviolo with Pink Sheets
Demonstration:
- Preparing and rolling out the pink beet puff pastry using the planetary and puff pastry machine.
- Step-by-step preparation of the Gallura-style filling of almond ricotta, sugar and lemon.
- Composition and closing of ravioli using special molds.
Mani in Pasta:
The students will put their hands in the dough, making ravioli independently with green and pink puff pastry, following the techniques acquired during the demonstration: rolling out the pastry with puff pastry machine, composition and closing of ravioli with 12-piece mold and appropriate stencils.
15:00 - Workshop Part: Culurgiones Ogliastrini
Demonstration:
- Preparing and rolling out the semolina pasta sheet using the planetary mixer and pasta sheet machine.
- Step-by-step preparation of the filling made with red potatoes, mint and Veghuri (+ alternatives).
- Composition and closing of culurgiones with the typical handmade seam.
Mani in Pasta:
Participants will put their hands in the dough, making culurgiones independently following the techniques learned during the demonstration: rolling out the pastry sheet with a sheeter, composition and closing of culurgiones by hand.
16:30 - Issuance of Certificates of Participation and Workshop Closure.
We end the day with the release of certificates of participation, celebrating the success and commitment of the participants.
